Well, summer is here and it’s time to get out grillin!  I’m no stranger to all types of consumable foodstuffs and will put just about anything on a grill; meats, veggies, fruits and even cooked a cherry cake in a dutch oven a few times.  But for Christmas, my beautiful wife got me a smoker and I was in shock and a little scared.  I had never smoked meat before and hesitated until this last weekend where I decided to make my first attempt. Even though I followed the instructions on the package for their recommended temps and smoke recipes, and I looked at a few youtube videos, it still didn’t go as nicely as I envisioned.  The meat caught fire at one point and it looked pretty nasty… …but it was still juicy on the inside and amazingly tasty and tender.  This is what I wrote on Facebook.

How I smoked meat my first time ever:

1.  Add as many coals as will fit and set it ablaze.

2. While it’s matching the temps of hell, prepare the meat that you should have prepped last night. 

3.  Get that meat hanging in your newly acquired ”In Grill Bäsik” for Christmas. 

4. Noting that the temp is only at 200F, open the vents completely to warm it up a bit. 

5. Walk away for 30 minutes completely confident that all is well in the world even if your Packers lost last night. 

6. Return to see temps around 450F… …freak out and open the lid allowing more oxygen in, totally intending to catch your tri tip on fire to burn off that unwanted excess fat. 

7. Turn to Facebook and get that expert advice to fix the problem, like the time you asked who to vote for in the last presidential elections. 

8. Adjust accordingly – lower the temps to just under 300F. 

9. After a full 4 hours of testing and tweaking, remember how you forgot to add the digital thermometer – hey, if Luke didn’t need his targeting computer, I can use the force to “know” the meat’s temperature, right?

10. Get the thermometer which first reads, -40F, then 220F, then blacks out from the stress. 

11. Trash the thermometer and revert back to The Force. 

12. Let your intentionally blackened meat rest for 20 minutes and carve it up. Perfection!

OFFICIAL FUEL PRICES IN PANAMA WILL INCREASE FROM FRIDAY

The new official fuel prices will be in force until January 27, 2023.

The National Secretariat of Energy announced the new maximum sale prices of liquid fuels in Panama, which reflect an increase and take effect from Friday, January 13.

In the provinces of Panama and Colón the price of a liter of 95-octane gasoline will be B/.1.009 (+B/.0.053), while the 91-octane price is B/.0.956 (+B/.0.039).

The liter of diesel in these provinces will cost B / .1.067 (+B / .0.021).

Prices per gallon in the provinces of Panama and Colon would be:

  • 95 octane gasoline | B/.3.82
  • 91 octane gasoline | B/.3.62
  • Diesel | B/.4.04

These prices will be valid until Friday, January 27, 2023.

It is worth mentioning that, although these are the official prices, after agreement with representative groups of various sectors, the National Government established a subsidy to set the price of fuel at B / .3.25 per gallon or B / .0.859 per liter (gasoline of 95, 91 and diesel) which will remain in force until January 15, 2023.

ELECTRONIC INVOICING: WHAT IS IT AND WHO SHOULD APPLY?

To have the Electronic Invoicing, interested parties must register on the DGI’s e-tax platform.

The electronic invoice is the evolution of the traditional invoice to a digital one for legal purposes, it has the same validity as the paper, however, it is generated, validated, issued, received, rejected, and kept electronically, which represents greater advantages when making an Income Tax Return before the General Directorate of Income (DGI) in Panama.

It is estimated that for every million electronic invoices issued, some 56 trees can be saved.

In Panama, Law 256 formalizes as an invoicing method the use of electronic invoicing and establishes the mandatory use of the SFEP as of January 1, 2022, for any new single taxpayer registry (RUC); and through Resolution No. 201-5215, the deadline was extended to October 31, 2022 for all State suppliers as their exclusive billing method,  except for the exceptions established in this law.

The traditional proof of payment now has an alternative which is the Electronic Invoicing.

Electronic Invoicing: Who should apply?

Article 1 of Decree 147 states that any natural or legal person, who is exempt from the use of tax equipment, is obliged to issue electronic receipts; among the most mentioned are:

  • Companies in Free or Free Zone
  • Headquarters of Multinational Companies
  • Operations and Services performed by Banks and Financial Institutions
  • Petroleum Freight Forwarding Services
  • Entities for compliance with construction, navigation, and ship safety regulations
  • National or international public passenger transport services, by sea, air, or land

Any natural or legal person who requests the use of Electronic Invoicing before the General Directorate of Revenue must register in the Electronic Invoicing System of Panama.

According to the Ministry of Economy and Finance (MEF), this alternative will help combat tax fraud. There are two modalities that are: Free Biller for entrepreneurial professionals or small businesses and there is the second modality that is Qualified Authorized Supplier (PAC) who wish to apply to this must continue with the requirements established in the DGI platform.

SUMMIT PARK TURNS 100: WHAT ACTIVITIES WILL BE DONE THIS 2023?

Summit Park has 250 hectares of great beauty.

This 2023 the famous Summit Park celebrates 100 years of existence. Here we show you the series of activities that will take place in this natural setting, established in 1923 at the behest of the former Panama Canal Company as a Botanical Farm.

January

The activities for the centennial celebration begin from this January with the program, ‘Let’s Camp Centenary’ from January 27 to 29, a family activity that will allow everyone to enjoy three days of coexistence, in direct contact with nature in a friendly, healthy and safe environment.

February

February 21 is the ‘Day of the Environmental Guide’ date that we will celebrate the contribution of ecology professionals who teach, train and raise awareness about the care of the human environment and human interaction with the space they share.

Educational tours will be held to inform and motivate future practicing and professional volunteers, national and foreign.

March

On March 22 we will celebrate the ‘World Water Day’ with activities that will exalt the importance of rain as a source of life and need

to take care of the environment that nourishes the bodies of water: lagoons, lakes, rivers and streams.

This Park, as a neighbor of the Soberanía Park and part of the hydrographic basin that supplies the Panama Canal has a great responsibility in preserving the aquifer flow as the main natural value.

On April 10 will be ‘Festiharpía’, ‘National Bird Day’ in which children come to this space enjoy a day of recreational and educational activities, costumes and scientific activities that illustrate the life of this magnificent bird, threatened by human action.

It will highlight the reasons why this species, the largest in the Western Hemisphere and whose image crowns the National Shield, is protected by Law April 18, 2002.

May

On May 20, ‘World Bee Day’ will be celebrated, the small pollinating giants that make the cycle of life thrive.

The Summit will promote this date as the opportunity to know and visit the new ‘Butterfly Garden’ dedicated to these lepidoptera of order of insects. Like bees, butterflies serve in the process of transferring pollen from the stamens to the stigma where the ovules of the flower are fertilized and germinate, making it possible to produce seeds and fruits.

June

June 28 is ‘World Tree Day’ we will celebrate the development of space as a first regional research center for the development of biology and horticulture.

It will promote the history of creation, procreation and reproduction of hundreds of species that are now part of the city’s arboreal environment and national heritage.

July

August

On August 14 we will celebrate the ‘National Day of the Golden Frog’, a protected species, endemic to El Valle de Antón, Coclé province and the Altos de Campana National Park in West Panama.

This small amphibian of the Bufonidae family that is in ‘critical danger of extinction’ has become a national emblem in terms of protection and strengthened the interest in promoting national conservation projects and the Natural Heritage of the World.

September

On September 2, the ‘Day of the Gallinazo’, a bird of prey, will be celebrated, with information about its value as a great recycler and cleaner of wildlife as it feeds on animal remains.

The king chicken that lives in an enclosure of Summit Park was rescued by MiAmbiente officials in Betania when it was prowling among the trees in the garden of a house. His feathers were trimmed, which suggested he was being held captive and escaped.

This King Gallinazo is distinguished from the Common Gallinazo by its white and grayish color, the color of its head and its bare neck.

On September 18 we will celebrate with a festival in honor of the ‘International Bamboo Day’ with an exhibition of historical photos, images and tours of the Bamboo Path.

Due to its durability, availability, sustainable use and lightness, this renewable plant material is increasingly gaining value for its alternative use in the construction of walls and roofs of houses, sheds, crafts, basketry, furniture and utensils.

There will be no better time to get to know the new ‘Path of Giant Grasses’ inaugurated in this administration.

October

On October 20 we will celebrate ‘World Sloth Day’ with guided tours, knowledge and information about their veterinary care, the stories of how they came to live at Summit Park and their threats.

A recognition to the benefactor, Dancing Breeza Rosseter’, who in an altruistic gesture sponsored the valuable construction of an enclosure as a contribution to its rescue, preservation and a tribute to the slow beauty of this animal.

November

On November 19 we will celebrate the ‘World Anthill Day’ with training activities and activities such as renovation of the furniture of its enclosure: installation of hammocks, feeder with termites and the installation of cameras to observe their behavior.

Anteaters, also known as palm bears, tamandúas, vermilinguos or yurumíes, belong to the suborder of placental mammals of the order Pilosa.

November 29 is World Jaguar Day, an appropriate date to educate about the life of the big cat and the key role it plays in stabilizing species in their natural habitat.

The presence of ‘Tango’ allows you to admire this beautiful specimen in a newly expanded enclosure and with areas that allow you to observe activities such as your training, your food, medical review and generate data on your threatened survival in nature.

This felid carnivore of the subfamily of the Pantherinos and genus Panthera is also known as yaguar or jaguar is also threatened.

December

December 2023 will be the month for the closing of the celebration of the festivities of this Centenary with a summary of the activities of the year and information on the flora, and especially, the stay of the fauna that inhabits the Summit Park, its history, the reasons that have led them there where they are provided with the best quality of life as the most humanitarian alternative to not being able to be returned to their habitat where they would not survive.

History

It was established in 1923 at the behest of the former Panama Canal Company as a Botanical Farm with the purpose of establishing a nursery that would allow studying, adapting and exporting species from various parts of the world to the tropical climate.

Its first director was the British-American, David Fairchild, envoy of the Plant Introduction office of the United States Department of Agriculture.

David Faichild was an important botanist-explorer and writer who introduced more than 200,000 exotic species to the United States, including soybeans, mangoes, dates, nectarines, cherry trees, wheat, cotton, rice and bamboo.

In 1979, under the Torrijos-Carter Treaty, it passed to the administration of Mida-Inrenare and in 1985 the Mayor’s Office of Panama received it as part of the municipal patrimony.

This Park of 250 hectares of great beauty, preserves species of native plants and trees, and others introduced for food, medicinal, ornamental and commercial purposes, as well as about 300 animals of different species that were integrated as an effect of seizures by mascotism, traffickers of species, injured by poachers and victims of accidents.

INAMU: MORE THAN 80% OF WOMEN SUFFER STREET HARASSMENT, IT IS THE MOST NORMALIZED TYPE OF VIOLENCE

The director of Inamu explained that there are complaints of women who come to change their daily route to avoid facing harassment, an act that ranges from a compliment to public masturbation.

The National Women’s Institute (Inamu) launched a campaign against street harassment. Nellys Herrera, director of the entity, explained that this campaign was born in response to the fact that 80% of women suffer from street harassment, according to statistics from the institution.

According to Herrera, street violence or harassment is the most normalized type of violence in society. It is a person who invades the physical or emotional space of another, on public roads.

This commonly occurs on public transportation, on the street, and in gyms.

The director of Inamu explained that there are complaints of women who come to change their daily route to avoid facing harassment, an act that ranges from a compliments to public masturbation.

Among the examples of harassment, he mentioned a complaint received by Inamu in 2022, in which a man masturbated in the Panama Metro, about the victim.

Herrera explained that aggressors generally think that victims like this type of aggression and society normalizes it.

“Deconstructing ourselves from a violent society is a process… It is a work of social transformation and requires tools,” he said.

Sexual offences statistics

From January to November 2022, 5,944 complaints of sexual crimes were registered in Panama, of which 2,269 were for rape, 1,031 for libidinous acts, and 36 for sexual harassment. Regularly, this last crime is not reported, given the normalization of this.

According to the Public Ministry, the complaints filed in 2021 for sexual crimes, in this same period, were 6,048.

REPORTING SEXUAL CRIMES AGAINST MINORS

To report sexual crimes or street harassment, if the victim is an adult, she must file a complaint, bring her personal identity card or some documentation that identifies her, with the Public Prosecutor’s Office; While if the victim is a minor, the complaint can be by anonymous means (telephone, written), or by a relative or adult acquaintance (teacher, doctor, neighbor, etc.), since in the facts in which the victims are minors, no requirements or formalities are required.

  • Complaints Reception Center of the Public Ministry located in the corregimiento of Ancón, Panama City.
  • The Directorate of Judicial Investigation throughout the national territory.
  • The Directorate of Judicial Investigation (DIJ) has a Section Specialized in Crimes of Sexual Exploitation, where complaints are received, and possible exploiters are investigated.
  • Public Prosecutor’s Offices in all judicial districts of the country responsible for investigating crimes against sexual freedom and integrity and trafficking in persons.

AAUD RECOGNIZES THAT “THE DEFICIENCY OF THE SERVICE HAS BEEN GREAT”, THEY WORK ON IMPROVING COLLECTION FREQUENCY

The secretary of the AAUD asked the population not to throw mattresses, cupboards or similar in the rubbish, because these can damage the compaction blade of the collection trucks.

The secretary of the Urban and Household Cleaning Authority (AAUD), Carlos Ábrego, acknowledged that “the deficiency of the service has been great”, and that there is still much to improve, however, he indicated that the time of disposal of garbage in the landfill, was reduced from 5 to 1 hour.

He explained that this reduction in hours is due to the fact that there are now fewer damaged collection vehicles, and that the state of internal roads and access routes has improved.

According to Ábrego, the ideal would be for trucks to travel three times a week in residential and commercial areas, however, there are times when they only pass once.

On the other hand, he mentioned that in areas such as Calidonia, Casco Antiguo and Amador, collection trucks pass daily.

Ábrego asked for support from the population so that they do not throw mattresses, cupboards or similar in the rubbish, since these items can damage the compaction blade of the collection trucks.

In the district of Panama there are a total of 220,000 customers, 26 corregimientos, and there are only between 35 and 40 collection trucks. Ábrego mentioned that they are trying to improve the frequency of collection in the different areas of the district.

SECOND DRUG SHIPMENT: PANAMA SENDS 55.7 TONS OF COCAINE TO THE US

Shipment of accumulated drugs sent by Panama for destruction in the United States.

A total of 55.7 tons of cocaine accumulated in the warehouses of the security forces in Panama were sent to Philadelphia, United States.

The drugs come from different actions and police operations.

This is the second shipment made by the Government of Panama for destruction in the United States.

According to Panamanian authorities, this measure is to eliminate in the bud the contamination caused every time the drug is burned in the open.

The first shipment was made on August 29, 2022, as part of a cooperation agreement signed with the U.S. Embassy.

This shipment was made in the presence of the Minister of Public Security, Juan Manuel Pino, the Deputy Minister of Public Security, Ivor Pitti, directors of the security forces and representatives of the United States Embassy in Panama, this boarding was made in an Air Force plane, which left the Octavio Garrido Air Base of the National Aeronaval Service.

Minister Pino indicated that in the United States there is an inter-institutional team and another with the burden to attest to this destruction.

He added that, for this year, one of the priority projects is to have a drug incinerator for the country, a procedure also used by authorities in Costa Rica and has been effective and convenient.

FIRE IN THE COLON FREE ZONE HAS BEEN CONFINED, SEVEN WAREHOUSES WERE CONSUMED

This fire registered in the Colon Free Zone began on the morning of January 10, 2023.

Almost 24 hours of work takes the Meritorious Fire Department in the warehouses burned in the Colon Free Zone. In total, seven of them have been consumed by fire.

According to the authorities, initially the work was focused on preventing the fire from spreading to other wineries, but at this time they seek to extinguish the incident.

Although the fire has been controlled, the structures may continue to burn for several more days, said Major Angel Delgado.

The red shirts, who received support from personnel from the National Civil Protection System (Sinaproc), Idaan, the Red Cross and the National Police, made assessments in warehouses near the fire to determine what materials they can use to prevent its spread, and identify the risks they face.

This fire, which caused the collapse of all the burned structures, has left millions in losses in the province of Colón, which is already facing a wave of unemployment and labor informality.

So far only one firefighter was slightly injured because of this incident, however, personnel who have already been working for more than 20 hours will be relieved with new personnel since residual smoke and hours of work are affecting the 200 units that are in place.

The lack of hydrants to supply the fire trucks was decisive for the spread of the fire.

Businessmen and residents of the province of Colón provided support to the firefighters, bringing them water and food.

The red shirts must remain in the area so that, once the ceasefire ceases, investigations can begin. Currently, the structures are fatigued, so firefighters work by a defensive method and avoid serious injuries.

There are five firefighting vehicles, two ladder vehicles, and seven Idaan tankettes at the site to put out the fire.

The Directorate of Traffic Operations of the National Police (DNOT) closed nearby roads to prevent incidents.

They also ask for collaboration from the population, workers and businessmen not to go to areas near the fire.

MELTING POT: AUTHORITIES ISSUE STATEMENT ON THIS PROGRAM

National Migration Service issued a statement on the Melting Pot of Races program.

The National Migration Service (SNM) issued a statement on the afternoon of Tuesday, January 10, that is related to the regularization process for foreigners known as “Melting Pot“.

The governing authority of migration in Panama stressed that “the realization of this process is not contemplated and that procedures are not being done in the institution in this regard.”

We urge the population to inform themselves through official communication channels, and ignore the so-called fake news, or false news, that circulates on social networks,” the institution said.

Crisol de Razas was an immigration regularization program that operated in Panama during two government administrations; and it allowed foreigners in Panama to  obtain their legal documents to be in the country more expeditiously.

With this plan, more than 350,000 foreigners managed to regularize themselves.

GENERAL ELECTION: WHICH OFFICIALS COULD RESIGN FROM OFFICE?

General Elections 2024.

The Vice President and Minister of the Presidency José Gabriel Carrizo, Vice Minister of Commerce and Industries, Omar Montilla, the Director of IFARHU, Bernardo Meneses, the director of Pandeportes Hector Brands are some of the officials who could resign from their position this year to participate in the 2024 General Elections.

The Executive Branch has stressed that, until January 15, any public official aspiring to a position of popular election, must submit his resignation to the position he currently occupies.

General Election: Why should they resign from office?

Article 27 of the Law of the Electoral Code explains that public servants who have held the following official positions at any time since six months before the election are not eligible for elected office:

Minister and Deputy Minister of State, Secretary General and Assistant Secretary General, and Director and Deputy Director General, National, Regional and Provincial of ministries; as well as Director and Deputy Director, Administrator and Deputy Administrator, Manager and Deputy Manager National, General, Regional and Provincial, of the autonomous and semi-autonomous entities.

It also highlights that officials of the Judicial Branch, the Public Prosecutor’s Office, the Electoral Tribunal and the Electoral General Prosecutor’s Office, the Comptroller and Deputy Comptroller General of the Republic, Magistrate of the Court of Auditors and Prosecutor of Accounts.

The Ombudsman and his Deputy may not participate as candidates in the general elections, as well as the Governor of the province, of the indigenous region and Intendant or Corregidor and members of the Public Force.

What if a candidate is still a public official?

According to the electoral code, article 28 states that a person who runs as a candidate for a position of popular election may not be appointed or exercise any of the positions mentioned in the previous article while maintaining his candidacy.

The nomination of a candidate in violation of this prohibition entails a defect of absolute nullity and the position will be vacant in case the candidate was proclaimed the winner, being obliged, even in the event that he loses, to return the salaries received, highlights the Electoral Code.

WHAT TO DO TO VISIT THE BARU VOLCANO NATIONAL PARK?

In total, there were a total of 28 thousand 574 visitors between nationals and foreigners, who visited the four main protected areas of the province of Chiriquí.

The Barú Volcano National Park (PNVB), was the protected area that reported the highest number of visits during 2022, with 12 thousand 545 tourists, followed by the Gulf of Chiriquí National Marine Park (PNMGCh) with 11 thousand 839 visitors.

In total, there were a total of 28,574 visitors between nationals and foreigners, who visited the four main protected areas of this province, according to statistics from the section of Protected Areas and Biodiversity of the Ministry of Environment (MiAmbiente).

While the International Park La Amistad (PILA) entered two thousand 11 people and the Wildlife Refuge La Barqueta Agrícola (RVSLB), 12 thousand 545 visitors.

The 2021 data reports the entry of 20,298 tourists to these four protected areas, that is, there is an increase in the number of visitors.

FUEL SUBSIDY IS EXTENDED UNTIL FEBRUARY 15, 2023

Cabinet Council approves extending fuel subsidy for 30 more days.

The President of the Republic of Panama, Laurentino Cortizo, announced that the Cabinet Council approved extending for 30 more days, starting January 16, the subsidy set at B/.3.25 per gallon of fuel.

This measure applies to the prices of 95-octane, 91-octane gasoline and diesel.

The extension is announced after the National Secretariat of Energy reported that the price of fuel has an upward trend. Starting this Friday, January 13, the cost of a gallon of gasoline will reach B/.3.82, while that of diesel will cost B/.4.04.

According to the National Government, this measure “represents a fiscal sacrifice.”

This subsidy came into effect on July 18, 2022 as part of an agreement between the Government and organized groups, which demanded that the authorities take measures in the face of the high cost of living.

DELICIOUS SMOKED FRUIT RECIPES FOR 2022 SUMMER BBQ

With temperatures warming up fast all over the country, it’s not too long now until you can get your trusted smoker out for a 2022 summer filled with tasty BBQs and garden parties.
As our range of BBQ-perfect lump wood charcoal keeps expanding in preparation for the long-awaited barbecue season, we want to help all the barbecue enthusiasts out there looking to make the most out of the summer months ahead find new ways to enjoy their garden space.
From smoking your favorite meats with a distinctive and authentic flavor to grilling the best BBQ vegetables for your next big cookout, there are always creative ways to refresh your barbecue routine and keep things interesting throughout the summer.

So, in the spirit of keeping the barbecue creativity alive, let us walk you through the colorful world of smoked fruits and smoked fruit desserts by unveiling our favorite smoked fruit recipes for a BBQ summer to remember!

1. Delicious Smoked Pineapple Sundae

Grilled and smoked pineapple slices are a BBQ classic for a reason: Incredibly sweet, a little savory, and versatile enough to work on a pizza, pineapple is the perfect fruit to add depth and smokiness to, no matter what you choose to pair it with!

For this staple dessert among smoked fruit recipes, you’ll need:

  • Four fresh pineapple slices, cut into rings
  • Four scoops of vanilla ice cream
  • A generous drizzle of chocolate or caramel syrup
  • Coconut flakes
  • Apple or Cherry Wood Chips for smoking

Start by cutting up your pineapple into medium-thick rings or half-rings (canned pineapple would also work in a pinch, but they’re not going to be as flavorful!) and placing the rings in a preheated smoker, grilling over medium-high heat for about 3 minutes on each side.

Plate the pineapple slices and scoop vanilla ice cream on top, finishing with a generous drizzle of chocolate or caramel syrup and a handful of toasted coconut flakes.

2. Smoked Pears With Gingerbread Stuffing

Got a sleeve of long-forgotten ginger biscuits hiding in your kitchen cupboard?
You can put them to good use with this easy, slightly spicy, and incredibly flavorful smoked pears recipe.
To prepare your next favorite in smoked fruit desserts, you’re going to need:

  • Four fresh large pears
  • Five ginger biscuits, crumbled
  • Five tablespoons of butter
  • Five tablespoons of brown sugar
  • ½ teaspoon of lemon zest
  • ½ teaspoon of ground cinnamon
  • Apple or Cherry Wood Chips for smoking

To prepare, start by scooping up the inside of your ripe, fresh pears after cutting them lengthwise and cutting the stem off. Next, you’ll want to stuff them with your beaten mixture of ginger biscuit crumbs, butter, brown sugar, lemon zest, and cinnamon, preheating your smoker to 120C.
Smoke the pears until soft and browned for approximately one hour, and serve your dessert with a generous scoop of vanilla ice cream, greek yogurt, or whipped cream!

3. Smoked Peaches with Cinnamon & Sugar

If you’re looking for a smoked fruits recipe that’s a little on the lighter side, look no further than this surprisingly delicious and fresh smoked peaches dessert, perfect for finishing your BBQ feast on a sweet (yet much healthier!) note.
Here’s what you’re going to need:

  • Five ripe large peaches
  • ½ cup of brown sugar
  • One teaspoon of ground cinnamon
  • A brush of vegetable oil
  • Apple or Cherry Wood Chips for smoking

Start by cutting the peaches in half and removing the pits after preheating your smoker and setting the grill to medium-high. Brush both sides with vegetable oil so to retain a neutral flavor with your perfect crisp, and place the peaches over the grill for about 3 minutes.
Combining the sugar and cinnamon, spoon the mixture on top of the grilled side and let it heat up, melt, and work its magic.

4. Smoked Figs & Mascarpone Dessert

Once the summer season is in full swing and you start spotting ripe, beautifully sweet figs at your local grocer’s, this delicious and decadent dessert will help you make the most out of this underrated fruit!
Here’s all you’re going to need to prepare your smoked fig dessert:

  • Ten large ripe black mission figs
  • Five fresh mint leaves
  • ¼ cup of honey
  • A brush of vegetable oil
  • ½ cup of mascarpone cheese
  • Apple or Cherry Wood Chips for smoking

To prepare, start by cutting the figs lengthwise, removing the stems and piercing five at a time with a long skewer. Oil the preheated grill with a brush of vegetable oil and place the skewers on the grate for approximately 5 minutes or until caramelized.

Plate the figs with a generous dollop of mascarpone cheese on top, drizzling them with warm honey and chopped mint leaves.


CRUNCHY SMOKED VEGETABLES

Why smoking veggies is a MUST try

Smoked vegetables are an easy side dish to throw on the smoker when making your favorite main dish. These go great with our smoked pork butt, you HAVE to try these together!

Cooking veggies on the smoker results in a nice little char on the broccoli and a great smoky flavor that gives the onions and peppers that little extra, taking these veggies over the top.

What veggies are best?

Smoked vegetables are extremely EASY to make. It’s a simple process of slicing the veggies into small pieces and then dousing them with olive oil and some spices. My favorite vegetables to smoke are:

  • Broccoli
  • Cauliflower
  • Mushrooms
  • Onion
  • Peppers
  • Carrots
  • Squash

How to smoke vegetables

Place a grilling mat or basket in the smoker, pre-heat to 225°F, and start prepping the vegetables. I’m using a pellet smoker, but a traditional stick burner would work great as well.

Slicing – Cut the veggies into small pieces, about 1″ square are just about perfect. You don’t want to have to cut them when eating, so bite size is best.

Season – Place the veggies into a bowl an drizzle with olive oil and a generous sprinkle of garlic powder, salt, and pepper. Shake the bowl up so the vegetables are evenly covered in the oil and spices. I use stainless steel bowls with tops, they are fantastic, we love these things.

Smoking – When the smoker is pre-heated, place the veggies into the grill basket and let smoke for 1 hour, turning/mixing occasionally. After the first hour, turn up to 400°F to give the smoked vegetables some crispiness.

Cook another 30-45 minutes and pull them off the smoker. I simply spoon them into a serving dish and top with a little more salt. That’s it!

FAQ

Can I use a gas grill?

Yes! There is no need to cook on low however since you will not get the smoke flavor. Bring the grill to 400°F and grill 30-45 minutes until crunchy and slightly charred.

What wood is best?

I like using a light wood, such as apple or cherry wood.

How long does it take to smoke vegetables?

A little under 2 hours for best results.

Old pro tips

  • Salt the vegetables after serving for best flavor
  • Make sure the mushrooms are fresh. If they feel slimey, they aren’t good anymore
  • Use several different colored peppers to make these bright and fun

What is Tri Tip?

Tri tip roast is a triangle-shaped cut of beef roast that comes from the lower part of the bottom sirloin. Most tri tips are purchased trimmed from the butcher and weigh around 2-3 pounds. Untrimmed, a tri tip will have a large fat side and layer of silver skin and can weigh nearly 5 pounds.

Tri tip is most popular in Western America, with possible origin ties to California, but it is becoming much more available (and popular!) across the rest of the United States.

Smoked Tri Tip

Smoked tri tip is an incredible way to prepare the steak, with good smoke flavor infused in a well-seasoned, perfectly cooked cut of meat. Feel free to use this recipe as a guide, and add your own favorite seasonings or sauces as you see fit. BBQ is all about making food that tastes good, so by all means, play around with this smoked tri tip a bit.

There are three steps to mastering the perfect smoked tri tip. First is seasoning, the second is smoking, and the third is searing. Do not skip any of these, as they are all key to making the most flavorful and juicy tri tip you’ll ever have.

How to Season Tri Tip

Whenever I am cooking a cut of meat for the first time, I like to keep my seasonings simple and pure. Kosher salt, fresh ground black pepper, and garlic powder sprinkled liberally on all sides is a great starting point for this tri tip.

If you like your tri tip with a bit more oomph, you can’t go wrong with a more complex seasoning. My Signature Beef Seasoning was made to compliment all cuts of beef without overpowering the flavor. Best of all? It’s delivered straight to your door!

If you don’t have any Beef Seasoning on hand and you just can’t wait to make your tri tip, feel free to make something from scratch!

How to Smoke Tri Tip

You can smoke a tri tip on any kind of smoker you have available, however, you need to be able to maintain a pretty solid 225 degrees F for the second step of the process.

During this stage, the tri tip will slowly raise in temperature, creating an even cook from edge to edge, and helping to retain moisture inside of your meat. You want to pull your meat off the smoker when the meat is within 5-10 degrees of your final target temperature (see the table below).

How to Sear Tri Tip

The final step is a high heat sear to lock in all of those juices and get a gorgeous crust on the exterior of the meat. I like to do this step in a really hot cast iron skillet with some sizzling butter, but you can also sear your smoked tri tip on a gas grill to get some lovely grill marks on the exterior.

How Long to Smoke Tri Tip

Plan up to 2 hours for smoking tri tip, plus an additional 5-6 minutes for searing and 15 minutes of rest time for a medium-rare steak. The times will vary slightly based on the doneness you’re trying to achieve in the center of your meat.

I recommend using an internal thermometer to check the temperature of your meat throughout the cooking process. It is the only fail-proof way to perfectly cooked steaks. I recommend investing in a thermometer that will last, like the Thermapen MK4. I’ve had mine for years and take it with me everywhere.

I follow the guide below for smoking and then searing meat to ensure I end up with it perfectly cooked in the middle:

For the first smoking step, pull off your tri tip roast at the following temperature:

  • Rare: 115-120 degrees F
  • Medium Rare: 125-130 degrees F
  • *Medium: 135-140 degrees F
  • Medium Well: 145-150 degrees F
  • Well Done: 150-155 degrees F

For the second searing step, pull off your tri tip at the following temperature:

  • Rare: 125 degrees F
  • Medium Rare: 135 degrees F
  • *Medium: 145 degrees F
  • Medium Well: 155 degrees F
  • Well Done: 160 degrees F

Once your steak reaches your desired temperature during the searing phase, remove it to a cutting board and let it rest for 15 minutes.

*I do not recommend cooking steak past medium, as it is the most flavorful and juicy from medium-rare to medium.


SMOKED CHICKEN

The internal cooking temperature of the chicken is 63 degrees Celsius in case you cut it and it’s raw, nothing happens! it’s better! because you use the top of the grill to finish cooking with the bbq sauce so it doesn’t dry out!

Cane honey marinade

1 cup soy sauce

1/2 cup cane honey

1 tablespoon dried parsley

1 tablespoon dried cilantro

1 tablespoon brown sugar

1 tablespoon currry

1 tablespoon dried oregano

1 tablespoon cinnamon

1 tbsp paprika

1/2 tsp cumin

Pro tip: Smoke calmly take your barrel @ahumadoresingrillpanama to 120 degrees centigrade (he has a thermometer).

A tip: in the base put sand with a little water to compact it so you won’t have to clean the grease, just remove the sand!
